Paul S - would this reference to the Hope Inn (previously the Paris Tap) be the one?
The following is from Mike Mead-Briggs history of the Court families of Dover, the wine merchants:
Stephen Court (my 3x great grandfather) was born 14 May 1821 and christened on 11 June 1821 at St Mary's, Dover [PR]. He was a wine merchant, working in the family business at 140 Snargate Street and became a Freeman of Dover on 22 July 1842 [DFR]. He was married firstly to Frances Phillis Bond Mead (born at Fordwich in 1824), the daughter of Charles Mead and Elizabeth (née Harvey) (see History of the Mead Family). Their intention of marriage was announced in the Dover Telegraph on 11 July 1846 and they married later that year [FM]. Stephen and Frances were to have five children (see Section 6).
Following his father's death in 1847, Stephen and his younger brother, Henry Payn Court, took over the family wine business. Henry was to die shortly afterwards, in 1851, leaving Stephen in sole control. During his life Stephen continued to expand the family business in Dover and he was to become a major property owner. At the time of his death in 1857 he owned or leased the Sceptre Inn, the Mail Packet Inn, the Burlington Inn, the Elephant & Castle Inn (Charlton), the Hope Inn (later the Paris Tap), the Royal Exchange, The Bell Inn, the Robin Hood Inn, 2 Wellington Terrace (Charlton), 3 Market Street, 137 and 142 Snargate Street, 44 Limekiln Street and parcels of property in Seven Star Street, Commercial Quay and Trevanion Street [DM]. The income from these properties alone amounted to several hundred pounds per annum.

Thank you Peter for missing me. I have been around you know, just a tadge busy and finally qualified as a teacher at the end of 2011.... Only to be made unemployed. Obviously too expensive now I'm qualified I suppose. Still looking for a job as well to date. However, my time has been spent wisely continuing the research of the history of the public houses in Dover and district. Most mornings spent in the library wading through the microfilm.
Anyway, regarding reference to the Hope inn from Kath Hollingsbee, this is the first reference I have seen regarding it being called the Paris Tap, so that is very useful information, but the Hope Inn was situated at 2 Great Street later to be named 15 Council House Street. The Paris Hotel being at 91 Snargate Street, but very often taps to hotels weren't connected to the same building. So I still don't know about this building. I have reference to the Hope Inn as late as 1913, with any luck I'll find reference to this changing name of closing in the papers of that year. Till then the research continues.
As of the premises, I wish the new owners all the very best of luck in their trade.

I have had this information from Mike Mead-Briggs, Court family researcher, about the above, with a correction that it was the Rose Inn which was formerly the Paris Tap, viz:
"Paul Skelton was trying to find out about the Hope Inn, which the text said was later called the Paris Tap, but that is not correct. There were a couple of words lost from the text somehow. It should have said:
... the Hope Inn, the Rose Inn (formerly the Paris Tap), ....
That's why he had never heard of the link between the Hope and the Paris Tap. Perhaps you could add a comment to the forum site to correct this, if you think it worth bothering.

The Rose Inn, we stayed there for a night in the 70's when moving from North Camp.
It was right opposite Saint Mary's church.
