i believe dogfish is huss, never heard of it until i moved here.

10 April 2012 12:09164535Kath, I am with you about skate definitely one of my favourites, I bought some from Morrisons last week and the skin had already been removed from both sides.
When I lived in London the chippy sold rock salmon and had never heard of huss until I moved to this area, I think it is an under rated fish.-----------------------------------------------------------------------
I try to be neutral and polite but it is hard and getting even more difficult at times.

The bigger sharks make excellent steaks and kebabs- but they all have to be eaten very fresh otherwise they develop an ammonia smell which is why the porbeagle shark is often called 'sweet William'.I'm an optimist. - 10 April 2012 13:10164549I like skate but as Peter says it has to be really fresh. I'm a bit wary of Morrisons skate, a couple of times I've bought some there and it's smelt of ammonia.

Dogfish, Rock salmon, huss, all from same family.
I used to put dogfish in mums sink after fishing all day, to give them a soak before skinning them, they stayed alive for hours, she used to go berserk

Yes indeed, skate has to be eaten fresh, in fact most fish does and is much better then.---------------------------------------------------
