Now something really serious...Gypsy Tart

  Today one of my friends Cllr Sheila Amos came down the Station and brought me a Gypsy Tart,yes one of the ones that we auctioned on Saturday night at the Mayor's Quiz,it went for £10 after a bit of encouragement from Stewart Dimmock and myself.
  
  Now Mel makes a wicked Gypsy Tart,but I have to admit that at the moment Sheila's Tart are my favourites, they have such a lovely texture and taste.......but Mel if you happen to make another one I should really check yours again,just to make sure Sheila's are the best......and if anyone else wants me to taste thier Gypsy Tart being the official taster (self appointed) I will judge yours as well.
  
  ps Sometimes it takes me two large Gypsy Tarts to make up my mind!
  If you knew what I know,we would both be in trouble!

  i can agree sheila gypsy tarts are out of this world, plus the other cakes she makes

  lol!! John Glad you enjoy a good tart! But you are right..you cant rush a good tart, several are required so you can assess 'em properly.

  John im far to busy cooking something else to do them but i did enjoy Sheilas last night at the bingo with my mates three pregnant women loved the entertainment and cakes yum yum

  I did have a look around just to see what exactly a Gypsy Tart was and noticed this vital information...

  Thanks for the recipes, sounds very easy! Will try this later. My neighbour told me yesterday that Gypsy Tart used to be only found in Kent, so it does seem to be a Kent Recipe.
  
  Never had it in Lincolnshire, there my grandma used to make curd cheesecake tarts with raisins in them - used to go to the old Market Hall in Grimsby where the country people brought their produce (spread on cloths on the floor very often, no tables) to buy the curd cheese. So delicious!

  I first had Gyp sy Tart at school in the 1950s, and still today it is my best tart we love it and my wife makes a real good Gypsy tart.

  My husband likes to be the official taster, JHG, not sure he would like it if I usurped his position ! I have now bought the necessary evap and sugar.

  Inspired by this thread, I had more goes at making Gypsy Tart. I've tried for years, and never been successful.
  
  This time, after a couple of attempts, I nearly managed to make one! True it looks a bit odd, and when it was cooking I thought it was going to escape from the oven as it kept rising and rising, getting bigger and bigger! But ... when it had finally cooled it looked (a bit) like a Gypsy Tart and certainly tasted rather like one.
  
  An interesting variation, though - we'd run out of ordinary flour, so I used some of the bread flour, complete with seeds, kibbled rye, and barley flakes. It made an unusal but rather nice contrast to the filling.
