It's not only the premises of course, the staff are also important in their procedures. Last year I went to a relative's umpteenth birthday party in a club that hosted such things. Halfway through the evening a hatch opened up to reveal a nice kitchen with cheffy all togged up in chef's gear including blue latex gloves. Burgers etc were freely available.
I watched while the initial rush occurred thinking that I would wait awhile. As I watched it became apparent the cheffy had a cold. Every now and again he would take a tissue from his pocket and wipe his nose. The tissue would then go back in the pocket only to be taken out after a few minutes, folded to find a dry place, wipe his nose again and put it back. At no time were the gloves changed.
A friend who was with me said that he was hungry. "Don't have a burger" I said.
