  Clearly basic hygiene matters tremendously but I recall when young enough not to care, that one of the best meals I ever had was in a remote part of France where there were no noticeable washing facilities, the cook had reasonably grubby hands and the horse (I think) burgers were delicious........served with a terrific relish that was probably way past a sell by date if they had existed then and in bread that the guy had made himself that morning before setting out with us.
  
  But, we know better now so hurrah for the scheme!!
