    I like making carrot cake, but find it hard to make a proper cream cheese filling. As I said above, when you beat it with icing sugar it just goes like a very runny icing, and not like the thick filling you get in bought cakes. I haven't made a curd cheesecake, but by chance on Genes Reunited, came across an english person living in New York who does a deep fried cheesecake!!
