    You forgot you can also add port Diana. I have one of the best recipes ever and the booze is added prior to cooking so I only have to add one extra lot before I clingfilm the cake, that way it doesn't evaporate. I used to get orders for Christmas cake as early as September and the local residential home had an extra large one every year.
