I read that too. Impressive, but based on 1/4 courgette, 1/6 yellow pepper and so on so would only work if you were cooking for a family. However I genuinely believe that highly processed food is not the cheapest diet and fresh produce in season is not necessarily a costly option. Easier if you have access to a good market or farm shop, but Lidl and Aldi have very good value fruit and veg if you shop wisely.
