    Nice one! I rather like budget meals. Our 2 standbys are pasta bake (natch!) and "layered dish": boiled unpeeled potatoes sliced thickly, cooked greens of some sort, a sauce made up of onion garlic tomatoes, sweetcorn, peppers, whatever is in the fridge that needs using fried/stewed in the large saucepan in good olive oil and with passata, herbs and seasoning,then all layered up in the large casserole dish and topped with grated cheese, in the oven for 30-40 mins. Never have any left! And it just uses up all the leftover greens, veg and pots, and you can add bits like fresh chillies or spring onions for a change. Never made two the same! Used basil oil last time - lovely! Nice if you have some mozzarella to swirl into the sauce before layering it, or if it's good firm mozzy, sliced and layered as well. I am beginning to feel peckish.....
